Il \u00e9tait \u00e0 la t\u00eate de l&rsquo;entreprise de caf\u00e9 Kaffee HAG. Et ce fut un accident. <b>En 1903, une cargaison de caf\u00e9 sur un bateau avait \u00e9t\u00e9 inond\u00e9e par l&rsquo;eau de mer pendant le transport.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>Un processus de dissolution chimique a \u00e9t\u00e9 utilis\u00e9 et la caf\u00e9ine a \u00e9t\u00e9 lib\u00e9r\u00e9e, mais sans alt\u00e9rer le go\u00fbt.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Roselius a alors mis au point une m\u00e9thode industrielle pour r\u00e9p\u00e9ter cet exploit. Il <b>fait cuire les grains avec diff\u00e9rents acides avant d&rsquo;utiliser le solvant trichlor\u00e9thyl\u00e8ne, chloroforme ou benz\u00e8ne pour \u00e9liminer la caf\u00e9ine.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">C&rsquo;est ainsi qu&rsquo;est n\u00e9 le caf\u00e9 d\u00e9caf\u00e9in\u00e9, brevet\u00e9 trois ans plus tard.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Plus tard, on a d\u00e9couvert que le <b>benz\u00e8ne \u00e9tait un agent canc\u00e9rig\u00e8ne possible.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Selon <b>Chris Stemman, directeur ex\u00e9cutif de la British Coffee Association<\/b>, la plupart des techniques mises au point \u00e0 l&rsquo;\u00e9poque sont encore utilis\u00e9es aujourd&rsquo;hui. Mais le processus n&rsquo;est pas aussi simple qu&rsquo;on pourrait le croire.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>La d\u00e9caf\u00e9ination a lieu lorsque le caf\u00e9 est encore vert, avant d&rsquo;\u00eatre torr\u00e9fi\u00e9.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Il existe plusieurs fa\u00e7ons d&rsquo;extraire la caf\u00e9ine :<\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><strong><span class=\"s1\">Solvants pour la d\u00e9caf\u00e9ination<\/span><\/strong><\/h3>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">On utilise g\u00e9n\u00e9ralement du <b>chlorure de m\u00e9thyl\u00e8ne ou de l&rsquo;ac\u00e9tate d&rsquo;\u00e9thyle.<\/b> Le <b>chlorure de m\u00e9thyl\u00e8ne <\/b>peut \u00eatre utilis\u00e9 comme <b>diluant pour peinture et comme d\u00e9graissant, ainsi que comme agent d&rsquo;\u00e9limination de la caf\u00e9ine.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>L&rsquo;ac\u00e9tate d&rsquo;\u00e9thyle<\/b>, quant \u00e0 lui, est un \u00e9ther de fruits naturel g\u00e9n\u00e9ralement fabriqu\u00e9 \u00e0 partir d&rsquo;acide ac\u00e9tique. Essentiel dans le vinaigre, il est \u00e9galement utilis\u00e9 pour<b> fabriquer du dissolvant pour vernis \u00e0 ongle<\/b>s. (Il a une odeur sucr\u00e9e caract\u00e9ristique, semblable \u00e0 celle des gouttes de poire).<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>Les grains sont d&rsquo;abord tremp\u00e9es dans l&rsquo;eau<\/b>, puis recouvertes d&rsquo;une <b>solution contenant l&rsquo;un de ces solvants. <\/b>Ce n&rsquo;est qu&rsquo;ensuite que la caf\u00e9ine est retir\u00e9e.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">L&rsquo;eau du solvant est ensuite r\u00e9utilis\u00e9e \u00e0 l&rsquo;infini jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit remplie d&rsquo;ar\u00f4mes et de compos\u00e9s de caf\u00e9. Ils sont pratiquement identiques aux grains, \u00e0 l&rsquo;exception de la caf\u00e9ine et du solvant.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">\u00c0 ce stade du processus, les grains perdent tr\u00e8s peu d&rsquo;ar\u00f4me car ils sont essentiellement tremp\u00e9s dans une <b>essence de caf\u00e9 concentr\u00e9e.<\/b><\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><strong><span class=\"s1\">Extraction au dioxyde de carbone<\/span><\/strong><\/h3>\n<p><img decoding=\"async\" class=\"alignnone wp-image-16102\" src=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/BCD00EC3-C405-4859-A9AC-1C1D73198FF7-300x186-1.jpeg\" alt=\"processus de d\u00e9caf\u00e9ination\" width=\"198\" height=\"123\" srcset=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/BCD00EC3-C405-4859-A9AC-1C1D73198FF7-300x186-1.jpeg 300w, https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/BCD00EC3-C405-4859-A9AC-1C1D73198FF7-300x186-1-64x40.jpeg 64w\" sizes=\"(max-width: 198px) 100vw, 198px\" \/><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #000000;\">1- La phase liquide et la phase gazeuse : le m\u00e9nisque entre le liquide et le gaz est bien visible.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #000000;\">2- Lorsque la temp\u00e9rature augmente, le m\u00e9nisque commence \u00e0 dispara\u00eetre.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #000000;\">3- Lorsque la temp\u00e9rature augmente, les masses sp\u00e9cifiques de la phase gazeuse et de la phase liquide deviennent presque \u00e9gales, et le m\u00e9nisque n&rsquo;est plus visible.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"color: #000000;\">4- D\u00e8s que la temp\u00e9rature et la pression critiques sont atteintes, la s\u00e9paration entre les deux phases, liquide et gazeuse, n&rsquo;est plus visible. Il n&rsquo;y a plus qu&rsquo;une seule phase qui se comporte \u00e0 la fois comme un liquide et comme un gaz.<\/span><\/p>\n<p>Cette m\u00e9thode a \u00e9t\u00e9 cr\u00e9\u00e9e au cours de la <b>d\u00e9cennie 1970 et implique l&rsquo;utilisation de dioxyde de carbone<\/b>. En g\u00e9n\u00e9ral, une fois que les grains de caf\u00e9 bruts sont tremp\u00e9s dans l&rsquo;eau et que le taux d&rsquo;humidit\u00e9 souhait\u00e9 est atteint, on ajoute du dioxyde de carbone aux grains.<\/p>\n<p class=\"p1\"><span class=\"s1\"><b>Le dioxyde de carbone<\/b> est ensuite ajout\u00e9 aux grains et \u00e0 l&rsquo;eau sous <b>haute temp\u00e9rature et pression<\/b>. Le dioxyde de carbone se lie \u00e0 la <b>mol\u00e9cule de caf\u00e9ine et l&rsquo;\u00e9limine du grain.<\/b><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Le dioxyde de carbone <b>charg\u00e9 de caf\u00e9ine est ensuite m\u00e9lang\u00e9 \u00e0 l&rsquo;eau<\/b>. La caf\u00e9ine est ainsi emport\u00e9e et le dioxyde de carbone est recycl\u00e9 pour \u00eatre r\u00e9utilis\u00e9. <b>Les grains d\u00e9caf\u00e9in\u00e9s sont ensuite s\u00e9ch\u00e9s et le dioxyde de carbone r\u00e9siduel est \u00e9limin\u00e9 des grains<\/b>. Ce processus de d\u00e9caf\u00e9ination permet d&rsquo;obtenir un produit de meilleure qualit\u00e9, qui pr\u00e9serve davantage l&rsquo;ar\u00f4me du caf\u00e9 que les autres m\u00e9thodes. En raison de son co\u00fbt plus \u00e9lev\u00e9, ce proc\u00e9d\u00e9 est g\u00e9n\u00e9ralement utilis\u00e9 pour la d\u00e9caf\u00e9ination du caf\u00e9 commercial. Il s&rsquo;agit du caf\u00e9 conditionn\u00e9 dans de grandes usines par des marques connues. (Nespresso)<\/span><\/p>\n<h4 class=\"p1\" style=\"text-align: left;\"><strong><span class=\"s1\">Le proc\u00e9d\u00e9 suisse \u00e0 l&rsquo;eau<\/span><\/strong><\/h4>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">La <b>m\u00e9thode suisse consiste \u00e0 tremper les grains dans de l&rsquo;eau<\/b>. La solution riche en caf\u00e9ine (pleine d&rsquo;ar\u00f4mes) est ensuite filtr\u00e9e \u00e0 travers du <b>charbon actif qui capture la caf\u00e9ine.<\/b> Cette m\u00e9thode a vu le jour en Suisse dans les ann\u00e9es 1930 et a \u00e9t\u00e9 utilis\u00e9e pour la premi\u00e8re fois \u00e0 des fins commerciales en 1979. Elle est devenue populaire parce qu&rsquo;il s&rsquo;agissait de la premi\u00e8re m\u00e9thode sans solvant de ce type.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>La d\u00e9caf\u00e9ination<\/b> s&rsquo;est largement r\u00e9pandue \u00e0 mesure que le <b>caf\u00e9 instantan\u00e9<\/b> est devenu un aliment de base, explique M. Stemman.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>Or, le caf\u00e9 instantan\u00e9 n&rsquo;a pas du tout le go\u00fbt du caf\u00e9. Le caf\u00e9 d\u00e9caf\u00e9in\u00e9 est encore pire.<\/b><\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\"><b>Stemman boit-il du caf\u00e9 d\u00e9caf\u00e9in\u00e9 ? Non.
