Les fruits verts seront r\u00e9colt\u00e9s plus tard lorsqu&rsquo;ils seront m\u00fbrs. Dans ce cas, deux \u00e0 trois r\u00e9coltes par plante ou parcelle peuvent \u00eatre n\u00e9cessaires en raison de la maturit\u00e9 in\u00e9gale du caf\u00e9. Ce ph\u00e9nom\u00e8ne est influenc\u00e9 par plusieurs facteurs tels que le climat, l&rsquo;altitude, le nombre de floraisons, la densification des plantations, entre autres. Comme il s&rsquo;agit d&rsquo;une op\u00e9ration qui demande plus de travail, elle est plus souvent utilis\u00e9e pour obtenir un caf\u00e9 de qualit\u00e9 sup\u00e9rieure, les cerises \u00e9tant la mati\u00e8re premi\u00e8re appropri\u00e9e.<\/p>\n<p>Notre caf\u00e9 est r\u00e9colt\u00e9 manuellement, lorsque les fruits sont m\u00fbrs. Ensuite, ils passent dans le tamis o\u00f9 commence notre processus de s\u00e9lection des grains.<\/p>\n<p>Apr\u00e8s avoir \u00e9t\u00e9 r\u00e9colt\u00e9, le caf\u00e9 est pr\u00e9-nettoy\u00e9, et doit \u00eatre laiss\u00e9 \u00e0 l&rsquo;ombre, et peut \u00eatre<br \/>\nemball\u00e9 dans des sacs ou des big-bags et transport\u00e9 vers le site de pr\u00e9paration et de traitement dans un d\u00e9lai maximum de 4 heures. L\u00e0, les grains sont lav\u00e9s et s\u00e9par\u00e9s. Apr\u00e8s cette \u00e9tape, les lots de caf\u00e9 s\u00e9lectionn\u00e9s sont s\u00e9ch\u00e9s au soleil en terrasse.<\/p>\n<\/div>\n<div><\/div>\n<div><\/div>\n<div style=\"text-align: center;\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-15991\" src=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1.jpeg\" alt=\"\" width=\"171\" height=\"300\" srcset=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1.jpeg 171w, https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1-64x112.jpeg 64w\" sizes=\"(max-width: 171px) 100vw, 171px\" \/><\/div>\n<div><\/div>\n<h3><b>Caf\u00e9 Naturel<\/b><\/h3>\n<div>\n<p>Le caf\u00e9 s\u00e9ch\u00e9 au soleil ou caf\u00e9 naturel, pr\u00e9sente des caract\u00e9ristiques d&rsquo;acidit\u00e9 mod\u00e9r\u00e9e \u00e0 faible, de corps, d&rsquo;ar\u00f4me et de douceur !<br \/>\nLes fruits sont \u00e9tal\u00e9s sur les terrasses en fines couches et retourn\u00e9s plusieurs fois par jour pour \u00eatre s\u00e9ch\u00e9s au soleil (processus naturel). Cette \u00e9tape est tr\u00e8s importante, car elle influencera la qualit\u00e9 finale du caf\u00e9.<\/p>\n<p>Ensuite, on peut proc\u00e9der \u00e0 l'\u00a0\u00bbenleiramento\u00a0\u00bb (empilage en rang\u00e9es), qui prot\u00e8ge les grains de la pluie, des orvaloses et des geases.<br \/>\nVers la fin du processus de s\u00e9chage, le caf\u00e9 doit \u00eatre empil\u00e9 pendant la nuit et recouvert d&rsquo;une toile pour \u00e9viter le gain d&rsquo;humidit\u00e9. La fin de la p\u00e9riode de s\u00e9chage a lieu lorsque l&rsquo;humidit\u00e9 des grains reste entre 10 et 11%.<br \/>\nLe temps de s\u00e9chage peut varier de 10 \u00e0 20 jours.<\/p>\n<p>Lorsque les grains sont totalement secs, ils sont transport\u00e9s dans les \u00ab\u00a0Tulhas\u00a0\u00bb pour y reposer pendant environ 30 jours. De cette fa\u00e7on, le temps de s\u00e9chage est uniforme.<\/p>\n<p>Apr\u00e8s cette derni\u00e8re \u00e9tape, les grains sont amen\u00e9s \u00e0 l&rsquo;usine de traitement o\u00f9 les enveloppes sont retir\u00e9es et les grains sont s\u00e9lectionn\u00e9s et mis en sac. Une ann\u00e9e, il produit beaucoup et l&rsquo;ann\u00e9e suivante, une plus petite quantit\u00e9.<\/p>\n<p>Un plant de caf\u00e9 prend 2 \u00e0 3 ans pour commencer \u00e0 produire. Dans la plantation de caf\u00e9, ils sont plant\u00e9s en rangs, formant des couloirs, pour organiser et faciliter la r\u00e9colte, ou comme on dit dans le Minas Gerais, la \u00ab\u00a0<b>panha<\/b>\u00a0\u00bb du caf\u00e9.<\/p>\n<p>C&rsquo;est \u00e0 la mi-octobre, au d\u00e9but des pluies, que le caf\u00e9ier se r\u00e9veille de sa p\u00e9riode d&rsquo;hibernation et fleurit. Dans la ferme, on dit qu&rsquo;une plantation de caf\u00e9 en fleurs ressemble \u00e0 un voile de mari\u00e9e.
