I frutti verdi saranno raccolti successivamente, quando saranno maturi. In questo caso, possono essere necessari due o tre raccolti per pianta o appezzamento a causa della maturazione non uniforme del caff\u00e8. Ci\u00f2 \u00e8 influenzato da diversi fattori, come il clima, l&#8217;altitudine, il numero di fioriture, la densificazione della piantagione, tra gli altri. Essendo un&#8217;operazione che richiede pi\u00f9 lavoro, \u00e8 pi\u00f9 spesso utilizzata per ottenere caff\u00e8 di qualit\u00e0 superiore, poich\u00e9 le ciliegie sono la materia prima pi\u00f9 adatta.<\/p>\n<p>Il nostro caff\u00e8 viene raccolto manualmente, quando i frutti sono maturi. Poi vengono passati al setaccio, dove inizia il nostro <b>processo di selezione dei chicchi.<\/b><\/p>\n<p>Dopo la raccolta, il caff\u00e8 viene <b>pre-pulito<\/b> e deve essere lasciato all&#8217;ombra, e pu\u00f2 essere messo\u00a0in sacchi o big-bag. Dopo viene trasportato al sito di preparazione e lavorazione entro un massimo di 4 ore. Qui i chicchi vengono lavati e separati. Dopo questa fase, i lotti di caff\u00e8 selezionati vengono essiccati al sole in terrazze.<\/p>\n<\/div>\n<div><\/div>\n<div><\/div>\n<div style=\"text-align: center;\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-15993\" src=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1.jpeg\" alt=\"\" width=\"171\" height=\"300\" srcset=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1.jpeg 171w, https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/7ABFE9B5-10E5-4DA4-A34A-2BBD61F7E44F-171x300-1-64x112.jpeg 64w\" sizes=\"(max-width: 171px) 100vw, 171px\" \/><\/div>\n<h3><b>Caff\u00e8 Naturale<\/b><\/h3>\n<div>\n<p>Il <b>caff\u00e8 essiccato al sole o caff\u00e8 naturale<\/b> ha caratteristiche di acidit\u00e0 moderata o bassa, corpo, aroma e dolcezza!<br \/>\nI frutti vengono stesi sulle terrazze in strati sottili e girati pi\u00f9 volte al giorno per essere essiccati al sole (processo naturale). Questa \u00e8 una fase molto importante, in quanto influenzer\u00e0 la qualit\u00e0 finale del caff\u00e8.<\/p>\n<p>Poi si pu\u00f2 procedere all \u201c<b>enleiramento<\/b>&#8221; (accatastamento in file), che protegge i chicchi dalla pioggia, dalle orvalosi e dai geasi.<br \/>\nVerso la fine del processo di essiccazione, il caff\u00e8 deve essere accatastato durante la notte e coperto con un telo per evitare l&#8217;aumento dell&#8217;umidit\u00e0. La fine del periodo di essiccazione avviene quando l&#8217;umidit\u00e0 dei chicchi rimane tra il 10 e l&#8217;11%.<br \/>\nIl tempo di essiccazione pu\u00f2 variare da 10 a 20 giorni.<\/p>\n<p>Quando i chicchi sono completamente essiccati, vengono portati nelle &#8220;<b>Tulhas<\/b>&#8221; per riposare per circa 30 giorni. In questo modo, il tempo di essiccazione \u00e8 uniforme.<\/p>\n<p style=\"text-align: left;\">Dopo questa fase finale, i chicchi vengono portati all&#8217;impianto di lavorazione dove vengono rimosse le bucce e i chicchi vengono selezionati e insaccati. La pianta di caff\u00e8 ha un ciclo produttivo biennale. In un anno produce molto e l&#8217;anno successivo una quantit\u00e0 minore.<\/p>\n<p>Una piantina di caff\u00e8 impiega dai 2 ai 3 anni per iniziare a produrre. Nella piantagione di caff\u00e8 vengono piantate in file, formando dei corridoi, per organizzare e facilitare il raccolto, o come si dice in Minas Gerais, la &#8220;<b>panha&#8221;<\/b> del caff\u00e8.<\/p>\n<p>\u00c8 a met\u00e0 ottobre, all&#8217;inizio delle piogge, che la pianta di caff\u00e8 si sveglia dal letargo invernale e fiorisce. Nella fattoria si dice che una piantagione di caff\u00e8 in fiore assomiglia a un velo da sposa. \u00c8 bellissimo!<\/p>\n<\/div>\n<div><\/div>\n<div style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16134\" src=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/DB4E6529-5AA8-420B-8719-E21951D70E6A-225x300-1.jpeg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/DB4E6529-5AA8-420B-8719-E21951D70E6A-225x300-1.jpeg 225w, https:\/\/cafesantahelena.com\/wp-content\/uploads\/2023\/06\/DB4E6529-5AA8-420B-8719-E21951D70E6A-225x300-1-64x85.jpeg 64w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/div>\n<div>\n<div><\/div>\n<div>\n<p>Nei mesi successivi, i fiori si trasformeranno in piccoli frutti chiamati &#8220;<b>chumbinhos<\/b>&#8220;.<br \/>\nQuando tutti i fiori sono caduti e sono rimasti solo i chumbinhos, inizia il periodo di maturazione che dura fino all&#8217;inizio di giugno, quando inizia la raccolta.<\/p>\n<p>Quando il terreno \u00e8 organico, le foglie sono forti e grandi.
